The 400 year old hisotry-filled building now houses the busy distillery. The building itself seems at times to hold within its walls something of the spirit of those who were there before – the people of the Liberties. We understand how mad that might sound, but trust us, if you’re ever fortunate enough to cross the threshold, you’ll immediately know what we’re talking about. The people of the liberties took pride in what they did, so do the team behind some of the best Irish whiskey being made today.
Their Master Distiller, Daryl McNally honed his craft, spending almost 20 years at Ireland’s Oldest Distillery distilling, blending, selecting casks and carefully watching over the maturing spirit. A man of patience and perfection, Daryl ensures that every drop of whiskey crafted tastes of Heaven.
The Dublin Liberties Distillery are inspired by the mavericks, the wild cards, and the pioneers of the Liberties’ past. They make whiskey their way. Their story is that of the history and mythology of the Liberties, the area known as Hell. And they have plenty of stories to tell, and plenty of whiskey to make.
