The Mercantile Hotel & Bar, a beloved landmark at 28 Dame Street in the heart of Dublin, will officially reopen its doors next week, on 4th of June, offering guests a blend of Georgian elegance and contemporary Dublin charm in one of the city’s most historic locations.
Following five years of careful reimagination, the hotel returns with 105 beautifully appointed bedrooms, an increase of 77 rooms. New features include two new bars with an all-day dining and a cocktail forward menu, and restaurant menu curated by celebrated chef Stephen Gibson, plus the addition of Café28, a stylish spot for grabbing a cup of Cloud Picker coffee. Room rates start from €150 per night for a single room, €160 per night for a twin room and €180 per night for a double.
Stephen Gibson, known for founding the award-winning restaurant Pichet and his work with Café en Seine, brings over 30 years of culinary expertise to the hotel’s new food offering. His menus at the Mercantile Hotel reflect a modern Irish approach to classic bistro fare, designed to appeal to both international visitors and local diners – featuring artisan Irish producers, such as Glenilen Farm.
The hotel’s design is inspired by 19th-century commerce and travel, with interiors by Millimetre Design that fuse Dublin’s heritage with a vibrant, modern aesthetic. The restoration by Michael Fitzpatrick Architects and Adston Construction carefully preserved original Georgian features such as the building’s façades and sash windows, while introducing new elements, including a rear extension and an additional floor. The team has worked extensively with Irish suppliers including bespoke furniture designed and manufactured by McGuigan Furniture and lights by Mullan Lighting both based in Monaghan, toiletries by The Handmade Soap company in Meath and Irish made mattresses by Respa.
