
A Taste of Wonderland: Six by Nico Introduces Mad Hatter’s Tea Party Menu for Summer

Launching on Monday, July 14th 2025, Six By Nico will unveil its brand-new Mad Hatter’s themed tasting menu in Dublin, promising guests a curious and curiouser six-course experience like no other.
From the moment you step into Six by Nico, you’ll be transported to a world of fantastical flavour, unexpected twists, and playful presentations. Inspired by the eccentric charm of the Mad Hatter’s Tea Party, the new menu fuses childhood nostalgia with innovative gastronomy, designed to dazzle both the palate and the imagination.
This time, Six by Nico has created a surreal culinary journey, with dishes inspired by iconic scenes from Alice’s Adventures in Wonderland — from edible timepieces and whimsical “Drink Me” elixirs to playful nods to flamingo croquet.
Founder and CEO of Six by Nico, Nico Simeone says, “The Mad Hatter’s menu is one of our most creative journeys yet. We wanted to bring a sense of summer magic to the table, reimagining classic British tea party elements through the lens of fine dining. Guests should expect the unexpected – delightful flavours, theatrical touches, and a whole lot of fun on the plate”.
The whimsical tasting menu takes inspiration from the surreal world of Alice in Wonderland, presenting a journey through playful flavours and unexpected pairings. The first course, We’re All Mad Here, sets the tone, featuring a warm chicken fat doughnut paired with roast chicken juices, it’s savoury, indulgent, and completely unexpected. Moving deeper down the rabbit hole, Caterpillar Secret Garden offers barbecue Hispi cabbage, which rests alongside a delicate smoked potato terrine, accented with taramasalata and fresh garden herbs.
Each subsequent course adds to the narrative, from the vibrant and fiery tones of Paint The Roses Red, to the playful illusion of Breakfast In Disguise, and Sunny Side Upside Down, where egg yolk jam and black pollock echo breakfast flavours in an entirely new form. The journey ends on a sweetly ironic note with Jam First – Logic Later, an ‘inverted’ tea and toast experience starring burnt toast delice, summer strawberries, and a nostalgic ‘Jammy Dodger’.
Running from the 14th of July to the 24th of August. Six By Nico menus are six-course tasting menus, with vegetarian, vegan and other dietary alternatives also available. Each tasting menu costs €60 per person, and guests can enhance their experience with an optional wine pairing for €40pp or a cocktail pairing for €50pp.
