Dine Pavilion – What Happened
From the 20th – 24th February, the Dine Pavilion attracted foodies far and wide to not only sample, but watch how some of Dublin City Centre’s restaurants create their signature dishes and cocktails.

Saturday
Andrew Rudd from Medley
First up was celebrity chef Andrew Rudd, kicking off the food festivities in the Dine Pavilion sponsored by Airbnb with a three course meal fit for a crowd. The Asian themed menu consisted of carrot and coriander soup and beef stir-fry. Ending on a sweet note, strawberry roulade was passed around. It’s crunchy yet moist texture getting a thumbs up from the crowd.
Starting off the restaurant cooking demo’s were Soder + Ko. They brought their unique style to the Dine Pavilion cooking a cured salmon skewer with khaki fruit and soy sauce.
Next up in the Dine Pavilion was The Exchequer who showed us how to cook pork belly with carrot puree paired with apple and raspberry chutney. You blinked, and it was gone.
Following suit was good old TGI Friday’s. Cajun chicken pasta may seem like a strait forward dish but the crowd couldn’t get enough. A bit of trivia took place and next thing you knew, you had a voucher for a TGI’s cocktail in your hand.
Later on in the afternoon Café en Seine stole the show with Mixologist Julio shaking it up by taking us down cocktail memory lane. We of course needed a tasting to jog our memory.
Sunday
Cajun Chicken Pasta by TGI Friday’s
Our friends at TGI Friday’s and Café en Seine joined us again at the Dine Pavilion as they couldn’t get enough!
TGI’s fed the masses with crackling chicken breast. Again it went down a treat!
Pichet brought their Sunday vibes to the Dine Pavilion with pate on crusty bread. Yum!
Dublin By Mouth dropped by the Dine Pavilion to talk food and all things Dine in Dublin with our awesome sponsors Airbnb.
Café en Seine returned teaching us all the tricks to make the perfect cocktail. Blue Lagoon anyone?
My Nutrition Ireland popped in to say hi and showed the crowd how to make quick healthy dishes. Salmon was served up first, followed by a guilt free chocolate cake.
Monday
Thai Chicken Curry by Opium
The day started off in reverse food wise at the Dine Pavilion but the audience were definitely not complaining. 101 Talbot graced us with their delicious mini doughnuts served with salted caramel sauce and mango panna cotta.
Next up was Opium at the Dine Pavilion with their Thai cooking tips. The queue kept growing for their chicken cashew stir-fry.
Don’t worry it was well after midday when Xico joined us to give a Margarita masterclass. The crowd were delighted to try the infamous drink at the Dine Pavilion whilst they sat back and relaxed in the Airbnb lounge.
After taking a break for music the Dine Pavilion was back with Coppinger Row taking us step by step through their most popular cocktails made by their master Mixologist.
Le Bon Crubeen finished the day with profiteroles with a vanilla filling. Chef’s Chris and Paul made sure the audience left with a smile on their face!
Tuesday
Octopus by Platform 61
Platform 61 arrived to the Dine Pavilion bringing with them the best of Croatian cooking. The Octopus certainly got the audience talking whilst they were sampling some red and white Croatian wine.
An old favourite, Captain Americas dropped by the Dine Pavilion to serve the masses some spicy chicken wings and two of their best-selling cocktails. If you weren’t quick they were gone in a flash!
Up next was 37 Dawson Street. They created a warm chorizo salad which went down a treat with the audience. It looked and smelt so good!
The Morgan certainly knew how to put on a show. The music was pumping and the bongos were playing whilst Johnny gave us the ultimate cocktail masterclass. If you were lucky enough to be at the Dine Pavilion there were plenty of vouchers up for grabs.
Last but not least was Mao. They need not say a word as everyone already knew how good the food would be. The queue was long as they served up chicken curry, Hong Kong beef, and chicken stir-fry with rice.
Wednesday
Gluten free buckwheat crepes with jack fruit by Cornucopia
The final day of the Dine Pavilion started off with our friends at Captain Americas bringing back the wings and the Woo Woo’s.
Soon after the audience had the opportunity to taste homemade ricotta cheese by Fallon and Byrne. It was delicately displayed as a bruschetta with duck and peppers.
Continuing the food frenzy at the Dine Pavilion was chef Rafa from L’Gueuleton who fried up some tasty fish cakes with curry mayo. If you looked away for a second they were gone!
Cornucopia were demonstrating next and blew our minds with what they made! Savoury gluten free buckwheat crepes with jack fruit. A sharing plate was placed in the middle of the Dine Pavilion and the crowd swarmed to try the exotic fruit which can be used as a meat substitute.
Our last cocktail demo of the Dine Pavilion was presented by Sam’s Bar. The Little Creature Cocktail went down a storm with the audience knocking back tastings left right and centre.
Again last but not least was Mao serving up Asian fusion as they had the day before. They ensured our Dine Pavilion guests went home with full bellies and fond memories!
